5/24/2008 Wait, I've got the house to myself ALL weekend? Hocus Pocus is out of town for the weekend. My son is at the lake. I've got no distractions except for a shiny new game (Age of Conan).
So it is cooking time again. I will make standard Frank Hot Sauce Buffalo Wings this weekend... No I won't.
I am going to try Alton Browns wing preparation method. Steam then bake. But I am going to try something a little different. I won't be using water to steam these wings, I'm using either beer or hard cider. Chicken likes apple. At least to me it seems that it does. The flavors mix well. So I think hard cider steam for the first part of the prep would add some interesting flavor to the wing.
Same for the beer. I mean think about it, beer butt chicken is pretty good. This would essentially be the same thing, right?
Oh heck, might as well do both.
Then some wings are headed for the smoker. My son bagged his first deer this year. He has been begging me to smoke some of it. Personally I don't think deer will take very well to a dry cooking method like smoking without turning into jerky. So I will have to do a wet method which can be tricky in a smoker. It'll be waiting for him when he gets back.
But if the smoker is going, why not toss a couple of handfuls of wings in? Speaking of Alton Brown. Ever see the episodes where he smokes meat? Well worth watching. There are three. One is salmon, one is bacon and the other is ribs.
Still working on allowing comments. I thought I had a place that would let me drop code in for it, but the comments never actually would show on the page. So I lost a few days screwing with it. They are coming.
