4/29/2008  Sweet, let's try that again. Honey-Frank Buffalo Wings
Sweet and hot go well together. I liked the combo of the Honey-Chipotle so well I wanted to attempt another. Last time we had hot and sweet, this time we are going mild and sweet.

Honey-Franks Wings 1 part Franks Hot Sauce
1 part Honey
1 part Plum vinegar - Can substitute Apple Cider Vinegar

Add vinegar to food processor and add honey. Pulse a few times to combine.

Add Franks Hot Sauce and pulse to combine.

Pour mixture into non-stick pan. Set burner to medium and bring to a simmer. scrape sides often to keep edges from crystallizing. Check the thickness with a spoon. If should coat the back of a spoon thickly. If it runs off the spoon it is too thin. (I avoid saying knape here because I can't remember how to spell it exactly and people won't really know what I am talking about.)

I hear you saying, "plum vinegar?" Yeah. What? You don't keep any around? Mine came from that source of everything gourmet, Dean & DeLuca. You can substitute apple cider vinegar like a common caveman if you choose. It will have a smokier flavor with the plum. Which you can get in most Asian markets. Personally, I had no idea what to do with it so started substituting it for apple cider and balsamic. Works great for the former, not as well for the latter.

So the sauce, it came out nicely. Mild in the heat category. It is a fairly unique taste, in a really good way. I would call it a very mellow flavor. Full bodied, but nothing overpowering. Makes a pretty good dipping sauce too.
