4/24/2008  Time to cook - Honey-Chipotle Buffalo Wings
First off, this is a stolen recipe from a blogger. Since seeing the recipe on TasteSpotting.com I wanted to give it a shot. I am always up for a new take on buffalo wings.

I made a couple small changes. First off, the honey was changed to Truffle Honey. Now I have to admit, to my palate at least, truffles remind me of potting soil. Not in a bad way. If you ever hear someone talking about the "earthy taste" of truffles, you'll know what they mean.

Another change was to make the chipotle puree from scratch.. ish. OK they were canned chipotle peppers, but quick spin in the food processor gets it where I want it to be. I also substituted olive oil for vegetable oil, but I do that for almost everything.

I skewered some chicken tenderloins (following the recipe here) and put them in the broiler while everything came together. Yeah I know, this isn't really buffalo wings, but this recipe is trying to make a healthy version. I know I need it.

When finished, the sauce coated the spoon nicely. It hung on the meat very well.

How was the taste? Quite good. It has a delayed reaction. The sauce hits your mouth just about the time you think, "Hey, that is pretty good" there is a little punch to the tongue. Everyone that tried it liked it. The sweetness was a treat, not too overpowering. The truffle honey was a waste, there was too much of an uphill battle with the peppers. I'll save the rest for that recipe that calls for "sweet potting soil". I made a big batch of the sauce and I don't regret it. For the vegetarians, it worked equally well on my baked potato wedges. What was really a shock, was how well ranch dressing went with it. I normally don't care one way or another with dressing. The saltiness of the dressing seemed to mesh like it was planned. I would make it again without much hesitation.

1/2 cups red wine vinegar
1 tablespoons Dijon mustard
1 8oz can chipotle peppers with adobo sauce
2 tablespoons honey
1 tablespoons Olive Oil
Salt and freshly ground pepper

Place peppers and their sauce into food processor. Pulse in long bursts until smooth.

Add rest of ingredients and pulse until combined. Works well with ranch dressing.
